The Easiest Vegan Recipes to Make During Your Quarantine

Trying to adjust to a new routine can be exhausting, never mind during a pandemic! You may feel exhausted from the change of pace and extremely anxious if you are keeping up with the news. Understandably, the thought of cooking may add to your overall feelings of discomfort.


So, let's just get back to basics. Eating simply can be delicious and minimize stress. Here are some of the most simple, healthy vegan recipes you whip up in a matter of minutes. Prepare to get into quarantine chef mode.


1. Spaghetti & Marinara


Boil water, throw in your favorite pasta, and it's ready in 11 minutes (or less! Check the box).


Pro Tip: Heat the marinara sauce in a pan on the stove and throw in some veggies! Broccoli, peas, and/or corn are great options. You can also top with basil, vegan parmesan or nutritional yeast.


2. Peanut Butter & Jelly


Ok, does it get any more basic/classic? You know what to do. Peanut butter on one slice, jelly on the other, and combine.


Pro Tip: Mix it up with different nut butters (avoid ones that contain palm oil if you can!) and jellies!


3. Oatmeal


Boil water, add oats, stir occasionally and serve!


Pro Tip: Top it off with some fruit, nuts or maple syrup! I like to mix in apple while the oatmeal is still cooking (Mmm warm apple!), and then add blueberries!


4. Plant Bowl


Build a bowl with your favorite grains, legumes, and veggies!

Pro Tip: Make a simple homemade dressing. My favorite is Minimalist Baker's chipotle aioli. Hot sauce or balsamic vinegar are also easy ways to add tons of flavor!


5. Bagel and Vegan Cream Cheese


Slice, toast and add a delicious non-dairy spread or nut butter.

Pro Tip: Make it a sandwich! Add lettuce, tomato or even some coconut bacon.


6. Avocado Toast


Mash an avocado with a fork, and add to a slice of toasted bread.

7. Veggie Burger


There are tons of frozen veggie burgers on the market now! If you can get to the store, pick some up, grab some buns, and cook as directed!
